Recipes of Sweets.

1. Recipe of Gulab Jamun

Ingredients:    gulabjamun
• 1 cup All Purpose Flour
• 2 pinch Soda Powder
• 100 gms Ghee
• 3/4 Liter Milk
• 6 Cardamoms (crushed)
• 1 tbsp Sugar
• 1 tsp Rose Essence
• 2 Pinch Saffron

For Syrup:
• 3 cups Sugar
• 3 cups Water
Method.
•    Boil the milk till it reduces to half cup.
•    Cool and add soda powder and 1tbsp sugar.
•    Mix properly and make it smooth.
•    Slowly add flour and prepare a fine dough. Leave it for an hour.
•    Apply little ghee on the palms.
•    Make small balls from the prepared mixture.
•    Pour ghee in a pan and heat. Fry the balls in ghee on a low flame.
•    Boil water with equal amount of sugar. Also add cardamom and saffron.
•    Filter and add rose essence to it.
•    Put the fried balls in this solution.
•    Remove after 3-4 hours.
•    Gulab Jamun is ready to serve.

2. Recipe of Pista Burfi.

Ingredients:    M_recipe_357
• 400 gms Pistachios (kernels removed)
• 250 gms Sugar
• Water (for sugar syrup) as required
• 7-8 Leaves edible silver foil (varakh)
Method.
•    Blanch the pistachios in boiling water.
•    Drain the water & remove peels.
•    Make a dry paste of the blanched and peeled Pistachios without using water.
•    Prepare sugar syrup.
•    Mix the pistachio paste with the syrup and keep on stirring until it becomes solid.
•    Now spread out the silver foil (varakh), and cut it into square pieces.
•    Pista Barfi is ready.

3. Recipe of Rasgulla .

Ingredients:    DSC05215-1
• 1/2 Liter milk
• 3 tbsp Lemon juice
• 2 tsp All Purpose Flour
• 1/4 tsp Rose essence or cardamom powder
• 1 Cup Water
• 1 Cup Sugar
How to make Rasgulla:
•    Take a pan and heat milk in it. Bring it to a boil.
•    Add lemon juice, stirring slowly and gently till cheese separates from the milk.
•    Now turn off the heat and strain it through a strainer.
•    Make sure all the water from the cheese is drained.
•    Now knead it to make soft dough.
•    Combine flour with it and knead again.
•    Make small rounded balls from the dough, keep aside.
•    The balls should not have any cracks in it.
•    Now combine sugar and water in a saucepan and boil it.
•    Add cheese balls to the syrup and cook it for about 30 minutes with lid partially covered.
•    Add rose essence or cardamom powder and turn the heat off.
•    Allow to cool and serve .

4. Recipe of Besan Laddoo.

Ingredients:    besan-ke-ladoo
• 4 cups Besan
• 2 cups Powdered Sugar
• 2 cups Ghee
• 2 tsp Elaichi Powder
• 4-6 Drops Saffron Color
How to make Besan Laddoo:
•    Mix the sugar and saffron color together. Leave it aside.
•    Melt ghee in a kadhai and cook the besan over low flame.
•    Stir continuously till the besan becomes light brown in color.
•    Mix the elaichi powder and again stir.
•    Remove from the flame and pour it on a plate. Let it cool slightly.
•    Now mix this with powdered sugar.
•    Divide it into equal parts and give the shape of laddus.
•    Besan Laddoo is ready.

5. Recipe of Mango Burfi

Ingredients:    recipe_107
• 250 gms Ripe mango pulp
• 250 gms Powdered sugar
• 250 gms Khoya
• ½ tsp Cardamom powder
• 2 tbsp Chironji.
• 1 tsp Pistachio, chopped.
• 1 tsp Tutti-frutti, chopped.
• Orange Color(optional)
How to make Mango Burfi:
•    Mix mango pulp and 1 cup sugar.
•    Cook in a pan over medium heat till reduced by half. Keep it aside.
•    Now fry khoya over medium flame till it turns little brown.
•    Add the remaining 50 gram sugar and mango pulp-sugar mixture to it.
•    Cook till the mixture turns semisolid.
•    Mix orange color, pour it immediately in a greased plate.
•    Allow cooling, cut into diamond pieces.
•    Garnish with cardamom powder, chironji nut and pista.
•    Mango Burfi is ready.
