Recipe of Carrot Soup. carrot-soup

Ingredients:

• 3 Cups Carrots (peeled and sliced)
• 5 tbsp Milk
• 2 Tomatoes
• 2 tsp Butter
• ½ tsp Garam Masala
• 2 tsp Garlic (peeled)
• A pinch Black Pepper Powder
• Salt to taste

Method :
Keep the carrots for cooking until their raw smell goes.

Boil tomatoes in the water to remove the skin. Remove the seeds also.

Blend together the tomatoes, carrots and garlic.

Melt the butter in a heavy based vessel and add the above mixture.

Allow it to cook for few minutes.

Now add milk and again cook the mixture for sometime.

Remove from the flame. Add a pinch of pepper powder, salt and garam masala to the soup.

Carrot soup is ready to savor. Serve hot.

Recipe of Chicken Tortilla soupchicken-tortilla-soup

Ingredients:

• 2 Cloves garlic
• 4 tbsp Margarine
• 1 1/2 lb Boneless, skinless chicken breasts
• 2 Large yellow onions, cut in 1 inch squares
• Cans chicken broth
• 1 Can whole peeled and chopped tomatoes
• 2 Cans diced green chilies, drained
• 1 Can whole corn, drained
• 1 Bunch fresh green onions, chopped
• 1/3 Bunch cilantro, chopped
• 2 tsp Chili powder
• Garlic salt
• Seasoned salt
• Pepper
• Tortilla chips
• Grated Cheddar and Jack cheese

Method :

Heat 2 tablespoons margarine in a 6 quarter pan.

Dutch oven or stockpot and sauté garlic for 1 to 2 minutes.

Season chicken breasts with broth, salt and pepper

Sauté over medium heat for about 5 minutes, until breasts are cooked but not browned.

Dice the chicken into 1/2 inch cubes and set aside. Add remaining 2 tablespoons margarine into pot and stir to loosen any dripping.

Add onion squares, sauté for about 2 minutes, until soft but not browned.

Pour in chicken broth, tomatoes, chilies, and corn from cans, and then add diced chicken, green onions, cilantro, and chili powder.

Simmer 15 to 20 minutes.

Chicken tortilla soup is ready.

Serve it with tortilla chips and cheese.

Recipe of Indian Lentil Soup

Ingredients:

• 1 Cup split lentils (Moong/ Arhar), sorted and rinsed
• 3 Cups water
• 1/4 tsp Ginger, crushed
• 1/4 tsp Garlic, crushed
• 1/4 tsp Red chili powder
• 1/8 tsp Turmeric
• 1/2 tsp Salt (or to taste)
• 1 tbsp Coriander leaves, chopped
• 1 Small whole green chili, seeded and chopped

Method :

Bring the water to boil in a pan (large enough to hold the water, with enough space to add the lentils.)

Add the lentils and all the other ingredients to the water, except salt, cilantro and green chili.

Let it cook for 15 minutes.

Add salt and green chili and let it boil for one minute.

Garnish with cilantro and serve hot.

Indian Lentil Soup is ready.

Recipe of Potato Soup

Ingredients:

• 2 Sweet potatoes, chopped cat_40
• 4 Cups vegetable stock
• 1 Large onion, chopped
• 1 Carrot
• 2 tbsp Butter
• 3-5 Garlic cloves, minced
• 1 tsp Rosemary, minced
• 1 Bay leaf
• 1 tsp Salt
• 2 tsp Pepper
• Parsley, for garnish
• Water, as needed

Method :

In a large soup pot, sauté onion and garlic in butter for 3 to 5 minutes, until onions are soft.

Add the chopped potatoes and carrot. Sauté for a few more minutes.

Add stock, bay leaf, rosemary, salt and pepper.

Bring to a boil and then reduce to simmer.

Cover and allow to cook, stirring occasionally, until potatoes are very soft.

Remove the bay leaf and season the soup with parsley.

Potato Soup is ready.
